Kazakh cuisine is becoming a new trend, especially with traditional dishes prepared using modern technologies. Culinary masters experimented with national products at the fifth International Gastronomic Festival in Astana.

«Then, they will add smoked kurt, which is an element of the national cuisine. It is an essential ingredient and will be wrapped in puff pastry.»

Contestants must present their own variations of hot and cold appetizers, choosing their form and composition.

«I will make a mousse from kurt. I will also add cream and cottage cheese. That’s how the mousse will be made. Since we need to use our national ingredients, I decided to make a mousse from kurt. Now, I am going to cook mashed cauliflower. I will wrap the meat in pastry with mushrooms and spinach,» said festival participant Nursultan Tolybek.

Participants from neighboring countries, Türkiye, South Korea, and China compete in culinary skills alongside students from Kazakh vocational education institutions and professional chefs.

«Kazakhstan has recently hosted the fifth World Nomad Games, and I decided to make a cake based on this theme. Here are the flags of the Turan countries, along with a common boz ui of Turkic people, nomadic people. I wanted to convey this theme. These are edible flags made from sugar paper,» shared Aibike Batyrkhanova, festival participant from the Kyrgyz Republic.

According to the organizers, students will have the opportunity to observe and learn about the culinary traditions of other nationalities. Moreover, the annual festival promotes the development of gastronomic tourism in Kazakhstan.
