‘Alim porridge’ is one of the old forgotten dishes of the Kazakh national cuisine. Everyone used to get treated with this meal twice a week – on Monday and Friday. A hundred years later, it was decided to revive this tradition in Turkistan and cook the delicacy. Legend has it that five centuries ago, farmers cooked the wheat and meat porridge after the first harvest. Some say that later it was renamed to “Kozhe”, which is known as a traditional Kazakh holiday dish.
“We are reviving the traditions of our ancestors. 500 years ago, everyone around was treated with this dish after autumn harvest. At present, we also ply pilgrims and tourists with the ‘Alim porridge’ twice a week,” organizer Aiko Token said.
