Demand for kymyz on rise

The production of kymyz is on the rise in Kazakhstan. This is due to the fact that this popular fermented dairy product, favored by nomads, is in high demand not only in the country but also abroad. The mare’s milk beverage is primarily exported to Russia, China, Türkiye, Germany, and France. There are many farms in Kazakhstan engaged in this business. One of them, located near the capital, is owned by Batyrbek Koshkarbayev.

«We currently have four mares producing nearly 20 litres of kymyz daily. This drink is gaining popularity among the population, and there is also a demand for saumal. If the demand continues to be high, we will increase the number of mares. Our plan is to expand the herd to 20 mares,» said farmer Batyrbek Koshkarbayev.

The recognition of these products is due to their healing properties. Saumal and kymyz are patented, and their uniqueness lies in the fact that each has its own distinct and irreplaceable method of production. Modern technologies help preserve the beneficial properties of the drinks. One such method is sublimation or drying, which is used to maintain the properties of saumal for long periods. Before this, the product undergoes deep freezing at temperatures as low as -55 degrees.

«The renowned medical scientist Sergey Botkin once said that kymyz is the only drink with effective healing properties in the treatment of lung diseases. Saumal also yields positive results, accelerating the recovery process from various illnesses. It is especially beneficial during the winter months,» noted Bakytzhan Bimbetov, gastroenterologist of the Medical Center Hospital of the President's Affairs Administration of the Republic of Kazakhstan.
